'A Taste of Africa’ showcased heritage and culinary specialties

The Penn State Beaver community gathered at noon, February 6, to share in ‘A Taste of Africa.’ The event, which was held at noon in the Student Union Building Lodge, showcased the heritage, history, music, and food of Africa to increase awareness and understanding of the continent’s diversity.

Members of the Cultural Fiesta: A Taste of Africa Committee performed African music and dance, displayed posters highlighting the history of various African countries. Committee members hosted tables featuring popular African foods, and attendees were invited to sample them as well as take recipe cards for each item.

Egypt
Kosheri - lentils, rice and pasta cooked and served in a spicy tomato sauce
Hosted by Iman Abubaker, senior, administration of justice, Greentree, PA

Nigeria
Meat Pie – moist, seasoned minced meat, potato and carrot filling served in baked dough
Hosted by Salewa Akintilo, sophomore, health and human development, Ellicott City, MD

Sierra Leone
Meat stew – eggs, onions, tomatoes, seasoning, and meat of choice served with rice or root vegetables
Hosted by Mary Carew, freshman, communications, Washington, D.C.

Ethiopia
Doro Wat (Chicken Stew) – chicken with onions, hard-boiled eggs, pepper, ginger, olive oil, butter, and lemon juice
Hosted by Lemlem Mebrate, freshman, Division of Undergraduate Studies, Alexandria, VA

South Africa
Malva Pudding – pudding made a variety of ingredients, including sugar, eggs, apricot jam, flour, milk, and seasonings baked with a sauce of cream, butter, sugar, vanilla, and water.

Ghana
Jollof Rice – rice, tomatoes, meat or fish, onions, and vegetables, often thought to be the origin of Cajun jambalaya
Hosted by Dora Tweneboah, freshman, health and human development, Monaca
Pineapple Buganda, a popular African beverage made of brown sugar, fresh pineapple, vanilla, and milk was served. Each recipe card included common phrases used in that particular country’s language.
